Gà hấp thơm mùi gừng với chút thơm nhẹ của nước tương (xì dầu), miếng gà mềm, vẫn giữ nguyên vị ngọt của thịt gà, làm tăng thêm hương vị đậm đà, ngon miệng cho món ăn.
Đùi gà rửa sạch, dùng dao khứa 1-2 đường trên đùi gà để khi hấp được ngấm gia vị.
Gừng gọt vỏ, cắt sợi. Hành tây bóc vỏ, cắt mỏng như hình bên.
Rải gừng, hành tây lên 1 cái đĩa, xếp đùi gà lên trên, cho vào xửng hấp trong khoảng 8 - 10 phút.
Lấy đùi gà ra, cho vào thau nước có thêm đá viên, ngâm đùi gà để cho gà được săn chắc.
Sau khi gà đã nguội, vớt ra, để ráo nước. Cho đùi gà vào tô, rưới lên gà 1 muỗng canh dầu mè, 1 muỗng canh rượu trắng, 2 muỗng canh nước tương, muối và tiêu, cho vào xửng hấp, đậy nắp, hấp khoàng 5 - 7 phút đến khi gà chín hẳn.
Cho gà hấp ra đĩa, trang trí thêm hành lá, ớt cắt sợi nếu thích để món ăn thêm bắt mắt, lôi cuốn nè.
